About four years ago, the founding partners of Marksbury Farm Market saw a gap in the fast-growing local food economy. They realized there was a strong desire among local farmers and producers who shared their vision to produce sustainable, humane and natural products. With a vision and a plan in place, Marksbury Farm took off, establishing themselves firmly in Garrard County as a small scale, locally owned butcher shop, farm market and processing facility with a dream of producing a wide variety of natural meat products from locally grown and humanely raised cattle, hogs and poultry, free of growth hormones, steroids and antibiotics.
Founding partners Preston Correll, Greg Correll, Richard McAlister and John-Mark Hack came together with a wide variety of backgrounds in business and farming, but a common goal of “maximizing the values of the Kentucky rich forage base and strong farm family traditions through the production of the highest quality local, natural meats.”
By utilizing the products of local farmers who share the same philosophy, Marksbury Farm Market has built a business that not only caters to local growers, but targets retail, restaurants, independent grocers and institutional food buyers.
At their Processing Facility in Lancaster, Kentucky traditional cuts of beef, pork and poultry are processed along with cured and cooked products. At the Butcher shop, also in Lancaster, a wide variety of fresh meats are available along with a selection of charcuterie, cured meat that is farm raised and ready to eat including pates, sausages and salamis.
At the retail location, fresh meats abound, along with produce, breads and a huge selection of other locally produced products. Choose from their culinary menu of prepared foods which include favorites such as pork pie, smoked turkey, meatballs, chilled chicken tikka and hanger steak.
